Also, where is their option to subscribe to categories and tags?

Works for admin only.

Please use mail log plugin to check. Yes you can subscribe to terms but they are not sent to email, only in your feed.

Used https://wordpress.org/plugins/wp-mail-logging/ . Only shows sent to admin. Also tested with an answer to a new question since adding the extension.

Yours doesn’t show up in the wizard. Had to download from https://github.com/wp-plugins/postman-smtp .
