How can I change the number of categories that show on the questions/categories page?
Looks like it only shows a few.

On the Category page …questions/categories/, it’s not showing all my categories. For tags I see you can choose how many tags are shown, but don’t see the same for Categories under Option in admin?

You’re right.
this is useful but most sites have a lot of tags and several categories. A post cans get a lot of tags but a few categories…
However I hope Rahul add this in future…
