How can I override functionality of function ap_recent_activity()?

I am struggling to figure out how to change the functionality of function ap_recent_activity() which is found in /plugins/anspress-question-answer/includes/activity.php (without editing the plugin’s files directly).
I’m trying to change the contents of <span class=”ap-post-history”> </span> so it only displays Question asked by [USER] regardless of the last activity.
Can anyone please point me in the right direction?
