Do you get email notifications for categories if you’re following them?

No. Subscribed categories are shown in users feed page. Sending email for every subscribed category will slow down your the whole site. For example, if 500 users are subscribed for a category and a new question posted in that category then AnsPress need to send email to everyone and at that moment your site will slow down. But if your server is fast then you can easily implement this feature.
